ingredients

1

1 container of Hershey's® Strawberry or Strawberry Cheesecake ice cream (1.5qt)

strawberry sauce

1

4 cups strawberries (frozen or fresh)

2

1 cup sugar

3

1/2 cup water

4

1/2 cup heavy cream

5

2 tbsp corn starch

Crust

1

3 cups crushed vanilla cookies

1/2 cup melted butter

Directions

strawberry sauce

  1. In a medium pan, bring strawberries, sugar, and water to a simmer over medium heat. Stir often and cook until berries are soft.
  2. Mash or puree the berries (a potato masher or immersion blender works well for this)
  3. In a separate bowl, whisk cream and corn starch together, then add to the strawberry sauce to thicken
  4. Pour mixture into medium bowl and refrigerate until cool

Pie

  1. Line a 9" Springform pan with parchment paper for easy removal
  2. Combine crushed cookies and melted butter in a large bowl
  3. Spread half of the cookie mixture on the bottom of the pan and pack it down gently
  4. Spread a thin layer of strawberry sauce on top of the ice cream
  5. Repeat the layers, using up the rest of the ingredients (cookie crust, ice cream, strawberry sauce)
  6. Freeze overnight
  7. Remove from pan about 15 minutes before serving
